Fishing & Hunting Knife / Knives

Which knife (knives) do you use (or want to use) for skinning, cleaning, processing,...?

Please share the specs for the knives and what you accomplish with them. If you have one knife that you use for both skinning game and cleaning/preparing fish, please share the particulars about how well it works for you.
